Katie, I figured out which enchiladas you were talking about. However, they aren't chicken, they're beef. Guess that's why I couldn't decide which chicken ones you were asking about. :) I got the recipe from a friend named Connie, so John & I call them "Connie's Enchiladas". She called them "Green Enchiladas". The recipe makes a HUGE amount, so hopefully they freeze well. Not really sure. It's always good to make for company, which is what I did for you guys.
Green Enchiladas
2 lbs hamburger
1-1/2 tsp garlic salt
1 small onion, chopped
Brown beef with garlic salt and onion. Set aside to cool.
In a saucepan combine:
1 can cream of chicken soup
1/2 lb velveeta
1 small can green chilies
1 small jar pimentos
5 oz can evaporated milk
1 small carton of onion dip
Stir until melted together.
Add one package fiesta blend shredded cheese to the cooled hamburger.
Roll meat/cheese mixture into tortillas and place in a greased 9x13 pan. (Usually fills 1 and 1/2 9x13 pans.) Pour sauce over tortilla rolls. Bake at 350* for 30 minutes.

Hi,
I am going to try this tonight! I have been AWOL from the kitchen because of a very fun life, but my poor family is wondering when we will have real food again:-(. I am talking two weeks off from classes so that I can change the guest room decorating from "walk in closet" and maybe make a few home cooked meals for my family instead of PTA:-).
