I'm trying to plan our dinners for the next couple of weeks. I get in such a rut with what I make for supper. It doesn't help that we have two kiddos who are a little on the picky side. I tend to stick with things that I know they will eat and enjoy. Probably like most families, I guess. I thought I would post a couple of recipes that all four of us really like, in case anyone else out there needs a new idea for dinner. If you know me, you know that I'm not a master chef. If I'm gonna make something, it has to be easy, quick, and yummy. I hope someone tries these and enjoys them. :)
Chicken Stuffing Bake (I usually double this recipe and have leftovers the next night.)
1 can (10-3/4 oz) condensed cream of mushroom soup, undiluted
1 cup milk
1 package (6 oz) stuffing mix
2 cups cubed cooked chicken
2 cups broccoli florets, cooked (I use frozen broccoli, uncooked)
2 celery ribs, finely chopped
1-1/2 cups (6 oz) shredded Swiss cheese, divided
In a large bowl, combine soup & milk until blended. Add the stuffing mix with contents of seasoning packet, chicken, broccoli, celery, and 1 cup cheese. Transfer to greased 9 x 13 baking dish. Bake, uncovered, at 375* for 20 minutes or until heated through. Sprinkle with remaining cheese and bake 5 minutes longer of until cheese is melted.
Unstuffed Peppers
1 lb. ground beef
1 jar (1lb 10oz) spaghetti sauce
2 large green and/or red bell peppers, coarsely chopped
1-1/4 cup water
1 cup instant rice
In 12-inch nonstick skillet, brown beef; drain, if desired. Stir in remaining ingredients. Bring to a boil over high heat. Reduce heat to medium-low and cook covered 20 minutes or until liquid is absorbed and rice is tender.
Chicken Hot Dish
1 package (26 oz) frozen shredded hash brown potatoes, thawed
1 package (24 oz) frozen California-blend vegetables
3 cups cubed cooked chicken
1 can (10-3/4 oz) condensed cream of chicken soup, undiluted
1 can (10-3/4 oz) condensed cream of mushroom soup, undiluted
1 cup chicken broth
3/4 cup french-fried onions
In a greased 9 x 13 baking dish, layer the potatoes, vegetables, and chicken. In a bowl, combine soups and broth; pour over the chicken (dish will be full). Cover and bake at 375* for 1 hour. Uncover; sprinkle with onions. Bake 10 minutes longer or until heated through.

That's so funny that you posted these, I was just sitting down to do our meal planning for the month and to make our grocery list! Thank you!! Oh, maybe we could get a posting of that YUMMY chicken enchiladas recipe?!? I can't remember what all was in it but man was it ever good! You could take the label of master chef with that recipe!! Fyi, I don't know if you ever use the canned, shredded chicken breasdt, but they have a huge, I think 3-5 lbs, can at SAMS for under $8! It's a cheap and east way to get chicken in a pinch!

Katie, I remember making chicken enchiladas when you were here, but I have to remember which ones they were. I've tried so many different recipes. Maybe John knows. I'll post them when I get it figured out. :)
And, yes, everyone is still doing good at this point. There is so much yucky stuff going around, I'm just bracing for the next round and waiting until spring!
Well, hopefully y'all built up a little immunity from round one to fend off round two!! The enchiladas were a recipe from your friend, maybe named Leslie... I can't remember what the friends name was but you had the recipe in your book, they were chicken and cheesy! If you guys are interested in Chipotle Tamale Casserole, Smokey meatballs, easy chicken pot pie or taco's with a twist just holler and I'll send you some recipes. Oh, also Rachel Ray's website has some really great, easy, healthy, and budget friendly recipes! She has a bunch of tricks to sneak veggies into dinners for picky eaters! Although if I remember correctly your girls like veggies, but it's a really great source for finding something new to try. She has a turkey meatloaf that is really yummy! I have that recipe too if you would like it! Happy Cooking!! Oh, we borrowed the unstuffed peppers and chicken stuffing casserole to try this month! I'll keep you posted as to how they go! Oh, one thing I do to help make things so faster is try to cook extra beef or chicken and then freeze portions so all you have to do it pull it out of the freezer and go. Also I chop and freeze lots of fresh veggies when I can buy them on sale and not only save money but also it's so much easier to not have to do the prep before cooking! I figure if I already have to do all the dishes than I might as well cook a lot so I won't have as many next time! :)
